Balut

How to make Balut and spicy fish sauce

Balut is known as duck eggs with a developing embryo inside.  Asian folklore says that when one craves for Balut, one is craving for sex as well.  I think that's a load of crap! I crave for balut because I love to eat the yolk inside.  I don't eat the embryo, but my husband do.  This is good to serve as an appetizer.  

What you'll need.. First you'll need to find a supermarket that sells Balut.  buy as  many as you want, if your having a big gathering you can buy as many as you think will feed to whole crowd.  
Fill a 26 quart pot 75% of the way, and add basil into it. 
I have no clue why we add the basil into the water, I just know that my mother, and my mother law has done it.  So you may skip this part if you like. 


I wash the eggs before I put them into the pot of water.  

after washing them add into the pot of water and bring to a boil.  Cook Balut for 25 minutes.  

Drain eggs out into colander, and rinse with cold water. 

Now your done with cooking the duck eggs which was a no brainer. On to the sauce. 

Dice the shallots and chop the siracha chillis, and chopped the green onions.  In a small bowl add all of it including 3/4 cup of fish sauce.  add 1/2 tablespoon of sugar, and squeeze juice out of 1 line into the bowl. Mix together until well incorporated. 

And now your done with that Balut and the sauce! 
Crack the Balut from the bigger bottom. Makes it easier to eat. 
Crack the shell of the top, just the top so that the juice doesn't come out.  Add a spoon of the spicy fish sauce and slurp the juice right out of it. 
This is how it looks inside of the egg after it's been cooked.  I know it's disturbing, and I applogize.  This food is part of our culture and it's very delicious. 

One day when your feeling like a dare devil, try this recipe out! You will not regret it.  

Ingredients: 

12 large Balut. (Serves 4 people) 
Basil
1 bunch green onion
1 lime
1/2 tablespoon sugar
4 siracha chillis 
1 clove of shallot
3/4 cup of fish sauce 

Directions: 
For Balut
1. Fill a 26 quart pot with 75% of water, add some basil into the water. 
2. wash the Balut before adding into water.  
3. Add Balut into water after washing and let boil, cook for 25 minutes. 
4. Remove from pot into a colander, and rinse, and set aside in a large bowl. 

For spicy fish sauce:

1. In a small bowl add chopped green onions, diced shallots, and chopped siracha chillis. 
2. Add 3/4 cup of fish sauce, and 1/2 table spoon of sugar.  
3. Squeeze juice out of 1 like into the bowl and mix together.
